Moong dal fryis a nutritious and flavorful recipe; it is an ideal side dish for roti, phulka, chapati, paratha, plain boiled rice, jeera rice, and ghee rice. Thisyellow lentil dalis an Indian vegan dish. It tastes delicious and has a smooth, creamy texture. Lentils are a good source of plant-based protein and rich in vitamins, minerals, and fiber. Moong dal tadka is a simple, easy, quick-to-make wholesome dish. Dal fry is made with soft-cooked yellow moong dal, onion, tomato, cilantro, curry leaves, chilies, and aromatic spice oil. It is low-calorie and easy to digest as well. Dal fry recipe is an everyday comforting and nourishing food. It a perfect dish to make for any season. I have made this recipe with yellow moong dal, but you can easily experiment with any type of lentils such as toor dal, channa dal, masoor dal, green moong dal, etc. Furthermore,this simpledal recipe can be made in numerous ways. For example, most of the Indian kitchen has a pressure cooker. So, for this dish, I have used both a pressure cooker to cook moong dal and a stovetop for sauteing veggies and tadka. Alternatively, you can use an instant pot or directly make it in an open pan. Dal is one of my very favorite dishes because of how quickly it is made. In general, dal is easy to cook, and moong dal cooks really fast, so this whole recipe is done within 25 minutes. Further, tempering dal in ghee/oil is a vital step as the spices like ginger, garlic, seeds will release an aromatic fragrance. So do not miss it. Also, dal can be tempered with either ghee or any cooking oil. Alright, let's get started! Serves - 2 Cuisine - Indian Course - Side dish for rice & roti Diet - Vegan/Vegetarian Prep time - 5 mins | Cook time - 20 mins | Total time - 25 min Author - Pavithra To pressure cook: 1. Yellow moong dal - 1/2 cup 2. Oil - 1/2 tsp 3. Turmeric powder - 1/2 tsp 4. Water - 1 cup To temper/tadka: 1. Ghee/Oil - 1 tbsp 2. Mustard seeds - 1 tsp 3. Cumin seeds - 1/2 tsp 4. Ginger - 1 inch crushed 5. Garlic - 2 crushed 6. Red chili - 1 7. Green chili - 1 8. Hing/Asafoetida - 1/4 tsp 9. Red onion - 1 medium sliced 10. Tomato - 1 medium sliced 11. Curry leaves - 1 sprig 12. Cilantro/Coriander leaves - 2 tbsp chopped 13. Salt - 1/2 tsp or As per taste 14. Water - 1/2 cup or As per requirement.

How to make dal fry recipe:
1. Pressure cook dal for 15 mins. You can boil dal directly in a pan or an instant pot.
2. In the meantime, heat oil/ghee in a pot/pan/Kadai over medium flame.
3. Temper mustard seeds, then cumin seeds, ginger, garlic, chilies, and hing. Saute until it turns fragrant. It should be done within 2 mins and make sure not to burn. Lower the heat if required.
4. Now, add sliced onion and cook until it turns pink and translucent. Sprinkle 1/4 tsp of salt to speed up the process of cooking.
5. Add sliced tomatoes and cook until softened.
6. Keep the pan covered for 5 minutes.
7. Roughly mash the dal and keep it aside.
8. Now, pour the cooked dal into the mixture.
9. Add the required water and salt.
10. Give it a mix and let it boil for 5 mins or until it's slightly thickened.
11. Sprinkle some chopped cilantro or coriander leaves and turn off the flame.
12. Yellow moong dal fry is ready for roti, chapathi, phulkas, and rice.
