Weight Watchers: Chicken Angel Hair Pasta Bake Recipe - A Mom's Take (2024)

Nothing is more satisfying than a rich and creamy pasta dish after a long frustrating day, but the calories and fat in most traditional pasta dishes can truly kill your diet plans.

This lower fat and calorie version of Chicken Angel Hair Pasta Bake was introduced to me many years ago when I went to a ladies conference with church and a fellow member made it for our potluck lunch.

She said it was found in a cancer recovery cookbook that she was given. I have never located the book and have tweaked it various times until we got the flavor just right for our family but the base is similar to what she presented. We are sure your family will enjoy this yummy casserole too.

Chicken Angel Hair Pasta Bake

Ingredients:

  • 1 Pound Shredded Chicken (we prefer boneless skinless chicken breast but you can use thigh or leg quarters just make sure to remove fat and skin)
  • 2 Cups Low Fat Low Sodium Chicken Broth
  • ½ Package Angel Hair Pasta (approximately 8 oz) cooked until just soft – will finish cooking in oven
  • 1/3 Cup Non Fat Sour Cream
  • ¼ Cup Skim Milk
  • ¼ Cup Grated Parmesan Cheese
  • 3 Dashes Hot Sauce
  • 1 Teaspoon Dried Italian Seasoning Blend (1/3 Tsp. Oregano, 1/3 Tsp. Thyme, 1/3 Tsp. Basil)
  • 1 Teaspoon Garlic Powder
  • Black Pepper as desired

Directions:

I like to boil up a big batch of chicken at the begging of the week. Shredded it up and store it and then it’s ready to go for recipes that night and for a couple of nights to follow.

Boiling chicken is super easy. You just toss it into a pot of water and let the pot reach boiling and continue cooking until your chicken is cooked through. This recipe is also a perfect way to use up leftover shredded chicken.

Get your oven ready, turning it on to 350°F. Prep your casserole dish with non-stick cooking spray.

I lovemy casserole dish, that I got years ago, the oval shape looks gorgeous and it is perfect for this recipe! Rachel Ray has a similar oval stoneware casserole pan with awesome bright colors to pick from.

Stoneware is awesome because it cooks really well and transfers beautifully from oven to table! I love thisRachael Ray 4.5-Quart Large Oval Stoneware Bakers, it’s so cute and adds a great pop of color to my kitchen table!

Now, it’s as easy as combining all of your ingredients, including your cooked and shredded chicken and your cooked and drained pasta into a large bowl.

Mix together all the ingredients so everything is well coated. Pour all into your casserole dish and bake for 35 minutes or until bubbling and browned around the edges!

This is a perfect meal to serve alongside a large side salad, your favorite green vegetable or mix in some frozen veggies and bake in the casserole too.

I often make double or triple batches of this and divide into aluminum baking pans and store in the freezer for up to 3 months. It makes a perfect freezer to oven meal that just has to cook for 15-20 minutes longer to heat through completely.

FAQs

How long does it take to cook angel hair pasta? ›

While regular pasta cooks in about 8 to 10 minutes, angel hair pasta cooks in about 3 to 5 minutes. Angel hair pasta is similar to capellini pasta, but angel hair is actually a bit thinner. Both are best used with thinner, more delicate sauces according to the National Pasta Association.

How do you know when angel hair pasta is ready? ›

Angel hair pasta cooks very quickly, usually within 4-5 minutes, so make sure to keep an eye on it to avoid overcooking. Remember to test for doneness by taking a strand and tasting it. It should be firm but not crunchy. When serving your cooked angel hair pasta, pair it with your favorite sauce and toppings.

Should I cover my pasta bake? ›

Should I cover pasta when baking? The sauce and tomatoes in this Italian recipe provide enough moisture to bake it uncovered. Some pasta bake recipes may require covering to retain adequate moisture and prevent drying. It's always best to follow the method in the recipe.

Why does my pasta bake go hard? ›

If there's too much pasta and not enough sauce, you can end up with a dry bake. It's best to follow the recommended amounts in the recipe for a pasta bake that's just right. If you're cooking without a recipe, add the pasta to the sauce in batches so you can stop before you add too much.

Why is my pasta bake still hard? ›

“It's my first time cooking baked ziti and when I took it out the oven, the top layer of pasta was a little hard/dry. Why?” It should be a little dry and crunchy. But if it is excessively hard, then the most likely cause is that it was cooked for too long or at too high a cooking temperature.

How do you not overcook angel hair pasta? ›

Angel hair pasta cooks much quicker than other pasta types, so it's crucial to keep an eye on the timer. Generally, it only takes about 3-4 minutes to cook. Follow the cooking instructions on the package, but make sure to check the pasta a minute or two earlier to prevent overcooking.

Can you overcook angel hair pasta? ›

The window for perfectly cooked angel hair is relatively narrow. Since this variety is so thin, with a diameter ranging from 0.78 to 0.88 millimeters, boiling it just a few seconds too long, let alone two minutes, can result in overcooked pasta instead of the desired al dente texture.

How long do you boil angel hair pasta for al dente? ›

For authentic "al dente" pasta, boil uncovered, stirring occasionally for 4 minutes. For more tender pasta, boil an additional 1 minute.

Does angel hair pasta cook faster than spaghetti? ›

Angel hair, or cappellini, is the fastest dried long pasta to cook, oftentimes al dente in just three minutes. Spaghetti typically takes 8-10 minutes.
